No Gluten Free Treats to go with Your Coffee?

This can be really disappointing and frustrating. But you keep calm and carry on, don’t you? Now with this gluten free recipes , you can maintain your composure and have your biscotti too!Whip up these biscotti and you can easily stash a few in your purse for emergency noshing. No longer will you feel left out while everyone around you munches on their delicious treats. In fact, you’ll probably be happier with your snack than they are with their gluten-full counterparts, am I right? You made it yourself! From scratch! You know what’s in it! You know exactly where it came from. It’s especially nice because the treats everyone else indulges in on a regular basis are things you usually have to avoid. A nice biscotti tastes even better when it’s such a rare treat, doesn’t it?
Pistachios provide these cookies with a great texture, a wonderful nutty flavor, and they’re good for your health! Pistachios are rich in antioxidants and may reduce the risk of heart disease. Now you can feel even better about your choice to munch happily away. Not only are you satisfying your taste buds and your sweet tooth, you’re giving your body some of the vital nutrients it needs to stay healthy, such as copper, manganese, phosphorus, and vitamin B6. Pistachios have also been shown to be rich in antioxidants and may reduce the risk of heart disease by lowering cholesterol levels. They’re also low in calories but high in those good unsaturated fats! And ½ a cup of pistachios gives you 13 grams of protein, plenty of fiber, and a good dose of iron, with no cholesterol! By the time you’ve finished all these cookies, you will have had three times the benefits of ½ a cup! Good for you! Doesn’t that feel good?
Many of us with gluten intolerances have suffered from years of intestinal damage before discovering we were reacting to gluten. This can make it harder for our bodies to absorb the nutrients it needs. The more high quality, nutrient dense foods you eat, the better chance your body has for holding on to all that good stuff. With this gluten free recipe, you can feel free to eat those biscotti like they’re going out of style! Ok, so maybe that’s a bit much, but you should feel good about this treat when you indulge.
Gluten Free Lemon Pistachio Biscotti Recipe
Ingredients
1¾ cup pastry quality gluten-free flour blend with xanthan gum*
¼ teaspoon kosher or fine sea salt
1 teaspoon baking powder
¼ cup olive oil
¾ cup light brown sugar
1 teaspoon pure vanilla extract
Zest of 1 large lemon
2 large eggs
1 ½ cups roasted, salted pistachios (if using unsalted pistachios increase the salt in the recipe to ¾ teaspoon), roughly chopped
* make your own gluten free flour blend by whisking together 1 cup superfine white rice flour with ½ cup superfine sweet rice flour, ¼ cup tapioca starch and 1 teaspoon xanthan gum.
Directions
Preheat oven to 300 degrees. Line a baking sheet with a silicon baking mat or parchment paper.
In a mixing bowl, whisk together the gluten free flour, salt and baking powder.
In a mixer fitted with a whisk attachment or with a handheld at medium speed, beat the olive oil with the sugar, vanilla, lemon zest and eggs until well combined. Turn mixer to low, gradually add the flour mixture. Add the pistachios and stir by hand to combine. Place dough on prepared baking sheet and form into a log which is roughly 12 inches long by 4 inches wide and ½ inch high. If dough is too sticky, wet your hands with water. Bake for 50 minutes or until golden brown. Remove from oven, increase heat to 350 degrees and cover the biscotti with two tea towels and let cool for 10 minutes.
Remove the log from the baking sheet and place on a cutting board. Using a thin, sharp knife, cut the biscotti on a diagonal into ¾ inch slices and place the slices back on the baking sheet. Bake for 10 minutes or until the biscotti are golden brown.
Store in an airtight container, especially important if the air is humid.
